What is it about watermelon and feta that just screams summer? This Watermelon Salad with Cucumber, Feta and Honey-Lime Dressing is perfect to serve as a side when you’re grilling or to put together for a quick and healthy lunch. Light and refreshing, it’s an elevated summer classic.

Ingredients 

For The Honey-Lime Dressing

  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon honey
  • Juice from 2 limes
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon Kosher salt
  • ⅛ teaspoon fresh cracked black pepper

For The Watermelon Salad

  • ½ medium watermelon peeled, cut into 1-inch cubes
  • 1 English cucumber, cubed
  • ⅓ cup mint leaves, chopped
  • ⅓ cup fresh basil leaves, chopped
  • ½ cup feta cheese, crumbled

Instructions 

  1. Make the dressing: In a small bowl, whisk together the ginger, honey, juice from one lime, olive oil, salt and pepper. Taste it, the lime juice should be coming through, so add the second lime if needed. Set aside.
  2. Make the Salad: In a large serving bowl, combine the watermelon, cucumber, mint, basil, and ¼ cup of the feta.
  3. Top the watermelon salad with the dressing and gently toss to combine.
  4. Top with the remaining feta cheese and serve right away.
  5. Enjoy!
